We decided to have dinner at Centrico in Downtown Disney before we headed into the park for the special event, Sweethearts Nite. Centrico is an open-air restaurant-cantina that serves Mexican dishes curated by Chef Carlos Gaytan.

We visited the restaurant on Tuesday, February 4, 2025, and arrived at the entrance at around 5-PM. We were seated in 10 min, no reservation.
We decided to order:
FOOD
Shrimp Aguachile: lime juice cured shrimp, cucumber, cilantro, red onion, chiles toreados, avocado, yuzu-lime aguachile
Carne Asada Tacos: sirloin steak, roasted knob onions, cilantro, chile de arbol salsa, flour tortillas
Fish Tacos: Mahi Mahi with light tempura crisp, creamy coleslaw, chipotle aioli, flour tortillas.
DRINKS
Ritual Margarita
Karl Strauss Hazy IPA
We liked the shrimp aguachile and would order it again. The drinks were good to! I definitely enjoyed the margarita.
The tacos were a 50/50 for us. The size of the tacos was good. Flavor was good but no spice! The carne asada tacos comes with chile de arbol, while the fish tacos come with chipotle aioli. The salsa they gave us with the plates did not cut it. For us when you say Mexican food, we expect the spice. However, we also understand and acknowledge that the main customer demographic at the Disneyland Resorts.
Close to the end of our tacos, our waiter (Noah) asked how we found the food and we let him know that we were missing spice if they had anything spicier. He said that they had two sauces, one habanero and another one that I can't remember the name, but it started with a "P". We asked for the habanero, but the waiter brought us the other one as he talked to the kitchen staff, and they said that we were going to enjoy that one instead. They were not wrong! I can only describe it as a creamy chipotle aioli but with the kick we were looking for.
He did let us know that the sauce isn't on the menu and it's one of those items that the kitchen keeps for when someone asks for spice. However, it's kind of unfortunate that they charge you $3 for it! Like why?! It should be included if the customer is asking for spice, it's like asking for hot sauce!
Overall, it was ok we won't be running to Centrico in Downtown Disney but were not completely closing the door on this one. If anything, we might just have to take our own salsa with us!
